… is from page 198 of the 1981 translation of Fernand Braudel’s indispensable 1979 volume, The Structures of Everyday Life: Civilization & Capitalism 15th-18th Century [1]; (Braudel’s quotation marks indicate that he is here probably quoting the late French historian Pierre de Saint-Jacob, although the matter of who, if anyone, Braudel is quoting here is a bit unclear):
‘Salt beef was the standard winter dish’ in [pre-industrial] England, in the absence of fresh food after the summer season.
Anyone who wishes seriously to become a genuine locovore might want first to consider such dreary – and unhealthy – realities such as this one (and consider, too, the many other realities detailed in Pierre Desrochers’s and Hiroko Shimizu’s 2012 book, The Locovore’s Dilemma: In Praise of the 10,000-Mile Diet [2]).
