‘Salt beef was the standard winter dish’ in [pre-industrial] England, in the absence of fresh food after the summer season.

Anyone who wishes seriously to become a genuine locovore might want first to consider such dreary – and unhealthy – realities such as this one (and consider, too, the many other realities detailed in Pierre Desrochers’s and Hiroko Shimizu’s 2012 book, The Locovore’s Dilemma: In Praise of the 10,000-Mile Diet ^[2]).
